I dig this concept. That stated, I don't have a huge sweet tooth. I can imagine savory stand-ins for most of the components. However, what would you suggest I swap out for the tuile paste?

This is a pretty traditional technique called joconde, that's often made into fussy little French mini cakes (entremet. She gives it a new spin and somehow makes it see easier.
