I don't know many people who make filo pastry themselves unless they are in a place where you cannot buy it. In the part of the world where I live the dough is opened with long thin dowel rods by rolling the dough around the rod and itself so that the dough is rolling itself thinner and thinner with each roll. Where I live the filling can be all kinds of things: mashed potato and cheese, ground beef, spinach and cheese, etc. I suggest buying some dough from the store and experimenting with fillings. They are less traditional but sweet fillings could be possible as well.

Now we need to see how bierocks are made. A neighbor of mine, growing up in California, used to make them, but I have no idea which culture they came from -- German maybe? I know it was a yeasty bread wrapped around a mixture of ground beef, onions, and cabbage. I remember the flavor of a little black pepper as well. Woo yummy.

Many years ago I saw a video of a bakery making filo dough. The man must have been in his late 60's, but he had that dough stretched over an 10 x 8 area, perfectly and he did it so fast, I am still impressed.

This looks so delicious! It reminds of my childhood where we would eat a flaky bread similar to this that was filled with fruit filling and twisted into a braid. Gonna have to give this a try!

It's called pashia in Greek
This is a pita.
You can use phyllo dough as substitute folks just liberally brush with melted butter.
I use feta and one egg for filling.

I know a lot of women or cooks south of the border use their hands to bring a shaggy dough together but I spent good money on a Kitchenaid mixer and I 'm gonna use that.
