Velveta and American cheese contain Sodium Citrate. That is the ingredient responsible for the creaminess that those cheeses bring. Ignore the haters and embrace the science. You can buy sodium citrate online if you prefer to add it in powder form. but really. just add a couple slices of American to your usual cheese blend for that creamy texture. It also keeps the cheese from separating!
Your son is a smart lad for learning to cook a few of his favorite things for when he leaves home. I have lived without a kitchen and I completely agree that an electric skillet is a game changer. Once you know a few recipes you can eat pretty well for a one pot system.

I love it! My friends son worked late shifts at his job. He would cook in his room too. He did that so he wouldn’t wake anyone up bless his heart. I gave him a GF grill. He was so grateful to have it. I never thought of using creama or Dijon mustard. I’m giving both of those a try!

Back in the day (1960s) before slow cookers were commonly available, electric skillets we're workhorse appliances for cooking and frying. Being able to make a stew or pot roast on low or fry doughnuts on high by dialing the temp. w/o adjustment once you set it is so convenient.

Haha, I like your son's recipe at the end! That was really great to see. I don't cook in my room but I live in a house with many other people and honestly, it would be a lot easier sometimes because the kitchen is pretty yuck.

Ooh yum. Will try your recipe portion, then may want to make large one for thanksgiving. The baked mac n chz my sister in law insists on making is too dry. Do u have a baked version for us to try

Believe it or not, I have never had mac and cheese. No offense, but after watching this, I won't be trying it.
I have made other Simply Mama Cooks one pot meals.

American and Velveeta cheeses have the chemical sodium citrate in them that makes them creamy. I just use straight sharp cheddar and a little of that to make it creamy.

i basically make it the same way except instead of water and bouillon powder i just use broth. i also cook my rice in broth. makes a big difference in flavor

The mon's sauce seems a bit too runny to me. I put less liquid in my Mac N' Cheese when I make it and it turns out nice and thick like custard.

Imma use quinoa instead. But this looks good. Gonna use the cheese base for a broccoli, quinoa, and chicken casserole. Imma meal prep so hard.

I have 3 daughters and 1 son. It’s my son that loves to cook! He makes the best broccoli cheese soup and Kabocha bread! Yum!
