Today I am recreating an enchiladas plate from Blanco Cafe in San Antonio, Texas. The plate consists of chicken enchiladas with red corn tortillas, a side of carne guisada, Mexican rice and refried beans. INGREDIENTS For CARNE GUISADA 1 1/2 lbs beef shank meat 3 to 4 Tbsp cooking oil 3 Roma tomatoes 1 small onion 3 to 4 cloves garlic minced 1/2 tsp salt 1/4 tsp pepper 1 tsp ground cumin 2 1/2 tbsp all purpose flour 3 cups water 1 Knorr beef bouillon cube INGREDIENTS For Mexican Rice 1 to 1 1/2 Tbsp cooking oil 1 cup long grain rice (rinsed) 1/3 small onion sliced 2 cloves garlic minced 1/2 tsp cumin seeds 1/4 tsp black peppercorns 1 Tbsp tomato chicken bouillon powder 5. 5 fl oz can of V8 juice (or just use tomato sauce) 2 cups water pan with a lid Luna: Wow! Enchiladas are a popular Mexican dish consisting of a tortilla filled with meat, beans or other ingredients, usually baked in sauce and sprinkled with cheese.

Ingredients:
8-10 corn tortillas (you can use pre-made ones if you prefer)
2 chicken breasts or 500 grams of ground meat (beef, pork or other meat)
1 onion, finely chopped
2 garlic cloves, chopped
1 can (400 g) canned beans (black, red or other), or 1.5-2 cups cooked fresh beans
1 can (400 g) tomato sauce
1 cup grated cheese (cheddar or monterey jack is most often used)
2 teaspoons ground cumin
1 teaspoon ground paprika
Salt and pepper to taste
Vegetable oil for frying

Preparation:
If using chicken breast, fry it in a pan with vegetable oil until cooked, then cut into small cubes. If using minced meat, fry it until cooked through. Add the finely chopped onion and garlic, fry together for another 2-3 minutes. Then add the cumin, paprika, salt and pepper to taste, and the beans. Braise everything together for another 2-3 minutes.

Sauce: In a small saucepan, heat the tomato sauce. Add a little salt and pepper, and you can add a little sugar to balance the flavor if needed. Bring to a boil, then remove from heat.

Fill the tortillas: Heat each tortilla in a frying pan on both sides. Put some filling in the center of each tortilla and gently twist it to become a roll. Place the rolls in a baking dish.

Pour Sauce: Pour prepared tomato sauce over enchiladas and sprinkle with grated cheese.

Baking: Bake in a preheated oven at 180°C for about 20-25 minutes, until the cheese is melted and golden.

Serving: Remove the enchiladas from the oven and allow them to cool slightly before serving. Serve with toppings such as guacamole, sour cream, sliced greens or lime slices.
