im mexican and i can tell you the best cheese to use is oaxaca and a cheese crust for the outside with some manchego in a corn tortilla and instead of grilled peppers use sauteed mushrooms with onions but still this recipe rocks it tastes awesome

I've never ever heard of quesadillas being fried up, all quesadillas i've made in my life as a mexican have always been with nothing but heat on the tortilla.
Im gonna try it next time, sounds a bit greasy but might have an interesting taste.

I don't have the materials in the house. :( But I'll get the ingredients and try making one the next time I go shopping.
Edit: I got the stuff and made this. It was pretty good. Worth the trouble I'd say.

I've had a lot of success with covering the cooking quesadillas with lids. Helps trap the heat, keep it moist, and really melt the hell out of the cheese inside.
