I tend to eat Pad Krapow at least 2 times a week, but I have eaten it much more than that. It's easy to make and you can eat it any time of the day. My wife, who is Thai, uses a mortal and pastel to smash up the garlic and Thai chili's into a fine paste before cooking it. It brings out even more flavor. We will also use a lot more Thai basil than that. As for heat levels, you can add more chili's after it's cooked as a garnish, or just add more as you cook. I like more heat, so I will add some diced Habaneros. The runny yolk is to help lessen the heat, so don't overcook the egg.

What do Thais use for the sugar normally Granulated sugar is something from the Americas. This isn't a dis at all- just trying to cut back on typical western granulated sugar. Do Thais use some sort of other sugar historically I'd rather use what they traditionally use as all the new era artificial sweeteners, even healthier, natural ones like Stevia taste like something Dow Chemical made. Do they use a native Thai molasses or honey or something Many thanks!

Sam, my man, thank you and love the show but the thing about cooking shows everyone hates is saying things like takes 15 minutes. Dude, it take me almost 15 minutes to dig around my fridge and cupboard to find the ingredients. Also, what's with the rice fairy Cooked rice doesn't magically appear as soon as I cook the rest of my breakfast. 50 minutes total in our rice cooker if all goes right.

Just a warning to those who want to make this - if you use regular basil in Pad Kra Pao it'll always taste like its missing something/never truly authentic, and I've never been able to figure out what to add to make up for it. Once you go thai basil you don't go back

I love how despite speaking the same language, things are pronounced differently. You say shallets, we say shall-otts. You say bayzell, we say bazell (the A is like camel. You say oregganoh, we say oreegarno. Tomayto, tomarto. I love it!

Ooo, such a good choice! Delicious. Pork (moo) is Thailand's favorite meat from what I understand. You could try the pork skewers they call moo ping, as well, but i'm asking for lahmacun still, amazing pita and meat dish from the ME.

Love the recipes. Love the crew. But I hate to say, not digging voice over Sam. overly polished voice over takes the spontaneity away and takes me out of the moment. Still, love you guys and thanks for all the new cooking ideas.

Oh man, I can't get the fresh Thai chili, but I do have dried Thai chili flakes and I use the shit out of them! Note to others, they are much hotter then you think, so don't use too much!

Sometimes, I can only find my Thai chilis in a large bag in the produce section, but they freeze beautifully until needed to cook. Thai basil is worth looking for.
