Want a perfect, steak-house steakat home? Then this is just for you. HOW-TO REVERSE SEAR INSTRUCTIONS: Eric: Ditch the canola oil and use beef fat trimmings. Canola is in the family of PUFA (Poly Unsaturated fatty Acids) and leads to inflammation. Read up on PUFAs. Cook to 118F and then sear longer in the cast iron pan. This steak was not medium rare in the video. Maybe a pat of butter at the end. I would never use horseradish sauce on a steak. It hides the great flavor of the ribeye.

I sear it for 1 min on the first side, 2 min on the second. During the last second on the second side, I throw in some butter, and spoon it over the steak. Also, if you like garlic, as soon as I flip the steak, I throw some sliced garlic into the pan. Crunchy garlic goes great with sauteed onions and mushrooms, IMO.

let it rest for 15 minutes after you pull it out of the oven to let the juices reabsorb. if you plop the wet steak on a hot grill you get steaming and the maillard reaction is delayed. Add the pepper on the finished steak, you get a fresher pepper taste and only the salt is adsorbed in the beginning

I've just become a convert to first searing the meat on the grill and finishing in the oven which is in reverse order to this video. This is after years of doing all my meat from start to finish on the grill. Life is good now.

So, I watched this and became a hero. Somehow, Bob did indeed become my uncle. Where do I go from here? Do I fight crime? Thwart villains trying to cook steaks using only a pan? Create a unique Super-Suit? I need guidance!

nice steak m8 & good idea making the horsey sauce with it. May I suggest next add a good few shakes of some worchestshire aka Lea & Perry sauce to your horse radish sauce. It really kicks it up.

Thanks! Cooked a USDA Prime ribeye this way and it was EASILY the best steak I have ever made! This is the ONLY way I will make a steak from now on. The horseradish cream was amazing as well!

Sam, we cooked our steaks like this tonight. We dont have a cast iron pan, and burned the shit out of our ceramic frying pan. But damn the steaks were awesome! Keep up the great work!

Sorry, I was looking for a grilling meat hold. Anyone can bake then put it in a pan. So sad. Use fire tough guy that pretends to know what he is talking about to hide his inadequacies.

Why put some horseshit radish on a perfect steak? The flavor of well-prepared quality meat stands on its own. You might as well cook it to 160F and soak it in A1. SMH
