the different paths you go down during a filming session at times drive me crazy, i like you and i want to see what your doing but then you spend time holding up a glob of butter in the air on a spoon like i should hear angels singing or something. I say everything has a payment and wanting to watch what your making comes with the payment of listening to you babble about nothing, like every time you use that garlic press. its the greatest thing everrrrrrrrr blah blah blah. and by the way, you do make good stuff, but is it always the greatest taco or whatever? lol.

Hey Sam and Max! Absolutely love your videos! I love your philosophy of f'ing a traditional recipe and making it how you like it! I am one of those people who hate cilantro and I like lemon better than lime. So I made the shrimp with mezcal, lemon, garlic, oregano and chipotle - served with jasmine rice and grilled plantains, Everyone loved it and Jerri said she would have preferred yours so she is dead to me! Keep on doing your thing brother! I watch every one and I'm watching all the old ones I missed too.

I dont drink anymore but you as long as the alcohol flames off like in this recipe or you bring it to a boil, you arent going to catch a buzz from it and Ive been sober for 30 years and I havent gone on a bender from anything Ive cooked that had alcohol in it, Im a school trained chef and grew up in a restaurant, stuff that takes alcohol but that doesnt get cooked off and ya eat you might have to change your sobriety birthday date

Just discovered your videos in the last couple weeks, and I made this dish tonight. I just want to say THANK YOU! This was insane, so flavorful, and youre right - it all happens so fast! And thank you for the compound butter - I will be putting that sht on everything! Im going to use it when I grill corn on the cob and baste it with the compound butter as it cooks! You rock! Keep up the great work!

Sam I made the Tequila Lime Shrimp today. My local market was out of the larger shrimp (I made the mistake of shopping at 4pm on Saturday. So I had smaller shrimp but it went well. Used the same tequila. I could have added alot more jalapeno and chipotle, i had a very subtle undertone of spice. But was very good! The compound butter is sitting nicely in my fridge waiting for the next recipe!

video is way to long, but 20 min videos make more money, so thumbs down, unlike tv I have a ffw, only a moron drags the sharp edge of the knife across the cutting board, try turning the the knife upside down to scrape. and your cast iron has rust underneath I can see it, it needs a good vinegar soak and reseasoned, but the dish looks great, 18: 40 must be 2 minutes lol

Pulling it of the heat is a safety thing Ive been in a restaurant kitchen and watched a friend hit some medallions of beef with some brandy it flamed and the fire fallowed the brandy up to the bottle, it wasnt good, he damn near burned down the restaurant, pay attention and remember, hot food hot and cold food cold, and youll never get in trouble

1. You needs some spice in your life, leave some seeds. 2. Looks like someone needed some was paper for some wax aka dabs! 3. What is it with people that don't pinch the tail of shrimp and get that meat out of there? I see it all the time at almost every restaurant I have ever worked at.

for those that ask the question about replacing the alcohol because you don't drink. just use the alcohol. it's not the same as drinking. you won't get intoxicated or even a buzz from it. so unless it's for religious reasons it's perfectly fine to use alcohol in the recipes
