Legendary sushi chef Masa Takayama was the first Japanese chef to helm a restaurant that was awarded three Michelin stars in the US. Now, he's going to show you how he cooks at home by using one fish to make three dishes. This zero-waste approach is going to use every part of the fish-even the bones and head-and use a variety of techniques, and not just Japanese ones. You'll also find out why you shouldn't buy ponzu sauce from the store

Whats the purpose of this video? Can I also have a kitchen helper and have everything cleaned up and prepare while I cook? And an indoor BBQ grill while it snow outside. Most of the way done in this video is not applicable in home cooking. Maybe the chef should cook at home with real local seasoned grocery.

The fish dishes look good. However, he did not use the -whole- fish as he had claimed. The liver, heart, intestine, bladder, etc. were not used in any way. These offal of most fish are edible and some of them can be quite tasty when prepared correctly.

Wow this is really enlightening. The way he does the fried rice has a lot of Thai inspiration. Good move with the anchovy at the beginning and also fish sauce on the finishing. I am going to take some of these ideas with me!

I really hope the sound team on this video isn't a sound team anymore. This video could be shown to potential hires to judge whether they know how to mix sound or if they're just retarded.
