Frank Pinello Meets The Tomato Canning Masters of San Marzano

When we traveled to Naples, Italy last year (the birthplace of Neapolitan pizza) we made a special trip to Pastificio Gentile in Gragnano for the end of their tomato canning season. If we learned one thing in Naples, it's that it wouldn't be a true Neapolitan pizza without San Marzano tomatoes. Frank Pinello watches the tomato canning masters at work and tries his best to keep up with them

The Sarno River is one of the most polluted rivers in Europe. It flows in southern Italy near Pompeii and Naples. Earlier it served as a means of livelihood for the people living around the river. But in the recent years, many cases of liver cancer have been reported which shows the level of degradation of the river. The upper reaches of the river are very much clean but when it travels down the water gets mixed with untreated agricultural and industrial wastes. Flooding and mudslides are very common near this river.

I wonder if San Marzanos are just Roma tomatoes grown in that specific region? Obviously, those aren't beefsteak tomatoes. --EDIT: A little research reveals that Roma and San Marzano tomatoes are in the same class (plum tomatoes) but aren't necessarily the same variety.

I love the pizza time music in the first part of the video. It actually had nothing to do with pizza when made but spiderman used it and now it sounds like one of the most stereotypical Italian folk song and perfect to listen to when delivering pizzas in New York.

I love these little tidbits of Frank's travels, which did not make it into the actual episodes of The Pizza Show. Hopefully, these are just appetizers for the main course - a brand new season of The Pizza Show! Please bring it back!

Frank is the man. Pizza Show is one of the few shows I watch with my 80 year old mom, everyone loves good pizza. --My dream is to try the Grandma pizza at Best Pizza. -Save me a corner piece please! Pizza Show!

Frank charges -5--6 a slice at his place in Williamsburg which is in contrast to the average pizzeria he loves to say his place represents. Such a shame, just another wannabe hipster.

So you're telling me that if I take my second ketchup bath made from San marzano tomatoes, it would be healthy and not incite another SWAT raid on my bathroom again?
reply

I met frank, guess what. he wasn't that friendly. lol i think his enthusiasm is a little put on. much like Mark Weins thinking EVERYthing he eats is delicious.

Love this video, ive always been curious how they produce the san marzano tomatoes, if they use steam, or chemicals to peel or what. Thanks for this.
