Today I am making a soft, fluffy cornbread to go with morning coffee. This is soft, buttery, and moist cornbread. You can adjust the sugar amount in this recipe to your preference Ingredients 1 1/2 cup (195 g) all-purpose flour 1 cup (125 g) self-rising cornmeal mix 1 Tbsp baking powder 1 tsp salt 3 large eggs 1/4 cup (60 ml) cooking oil 1 to 1 1/4 cup (236 to 295 ml) whole milk 1/2 cup (100 g) sugar 8-inch baking pan

Well it came out perfectly cooked and butter on top yes. I can see why you love this sweet cornbread with coffee! I love savory cornbread and look forward to leftovers that I put into (yes INSIDE OF) a nice tall ice cold glass of whole milk. Sounds very strange and maybe even disgusting to someone who's never heard of that, but it's incredibly delicious and any southerner has at least heard of doing it.

Try food network's Alex guarnaschelli's cornbread recipe with about a fourth of the amount of sugar and you have my go to southern cornbread recipe (I am from the south. Sometimes I add creamed corn and skimp slightly on the liquid, and/ or finely chopped peppers (whatever kind I have on hand from the garden)

If you only have plain yellow cornmeal, you can add an extra teaspoon of baking powder and a pinch more of salt. You can also substitute the whole milk with buttermilk and add extra sugar. I hope that helps.

Perked Coffee! .. .. YES! I know it doesn't rhyme. . but. . Once you've had perked - - you never go back to drip. Never thought of cornbread with coffee for breakfast. .. but sounds sorta good. .. and easy.

It looks fantastic!
If not using self-rising cornmeal, how much baking powder would you add, any other alteration?
If using buttermilk, does that affect how much baking powder you use in the mix?

You should try letting your batter sit for abt 5 min before folding in your egg whites. It helps to give the corn meal time to absorb liquid. You ll get a better texture in the end.

Yummy my fav I love cornbread I use buttermilk and sour cream to my cornbread it also comes out soft and fluffy

I have no idea what to expect flavour wise from corn bread but it looks so good! If I can track some cornmeal down I'm going to give it a try now that's slowly getting cooler.

Not normally a cornbread person. I think cause it's normally so dry. But this I think will take care of it being so dry. Thanks for the recipe.
