Todays recipe is for quick, fresh, small-batch kimchi made with napa cabbage, called baeuchu-geotjeori. I make it Jeolla province style, with a thick paste made from fermented anchovies. I found that Amazon has the YeongYang hot pepper flakes I show in the video!

I'm so glad & excited you made a small portion recipe of Kimchi. I'm the only one in my house that likes it. I buy it at the local market already made but it would spoil before I even finished eating all the contents of the container. I absolutely love kimchi with ramen. Hello Maangchi, i made this kimchi recipe today, followed everything but no gochugaru so i used gochujang instead. This is my first time making kimchi and it taste better than those from the store, we ate the kimchi with pork and chicken adobo (filipino food. We really enjoyed your recipe. Thank you!

Maanachi, how do you make the glutinous rice paste with out the fresh anchovy paste? Do you add a little water or just substitute the fish sauce. P. S. you should have a product list on Amazon so people can get the ingredients you like.

Hello Maangchi! What can I do to enhance the spicy flavour of the kimchi? If I just add more hot pepper flakes into the paste, it cannot dissolve thoroughly and I just taste a bit of bitterness eventually. Hope you can replyThank you!
