cheese Yesterday was my birthday, so my wife treated me even better than usual - a hike exploring waterfalls with our dog, cooking at the cabin, cheese fondue, braised lamb shanks, cake, breakfast, picnic lunch at the river. My daughters were very thoughtful - nice gifts and emotional birthday cards. It was a great day!

Starting back up this Friday, My Self Reflections will be a regular part of my weekly Friday video - I have a lot to say I'm realizing. :)
What do you think about me adding another video per week where I just talk about my life experiences, my successes and failures and the tricks I used to become more self reliant. I'm thinking Wednesdays, and it would be just discussions, no cabin building. Would anyone watch?

I enjoy watching all your videos, as well as my husband. But I am saddened by your diet. You are a hard working man and you are doing a great job, but your diet is not healthy. We want you to enjoy your labours for a long time, and in good health. Check out on YouTube, Forks Over Knives. Also videos by Drs. Caldwell Esselstyne, John McDougall, Neil Barnard, Dean Ornish. In Switzerlnd, Germany, Austria people use Obstler Schnaps (Kirschwasser) no Brandy. Mixing with the 8 Style as mentioned by a Swiss mate underneath also improves it to even more perfection. Absolutely fantastic watching you 3 enjoy. Best meal ever during a winter! Thank You The bread in my opinion is the most important part of a cheese fondue challenge and yours looks absolutely amazing - perfectly created by your wife. Wooooow! Spitze!

Well. Your fondue is separated. Swiss advise: put some starch into a little white wine, add it slowly (not all, just little by little) until you save your fondue.
Ps: if your fondue gets separated too offen it's probably that you heat it too much.

As a swiss I agree with the way you make fondue. Regarding the separation of the fat from the cheese, i have an additional tip: You should try to use a more sour wine. And if the fat still is separating, add some lemon juice.

Ah! Yes. I used to sell cave aged Gruyere, and Emnental in my shop. You would be surprised how many Swiss people there are in the Scottish Borders! Delightful and delicious scene. Regards Stephen.
