Title says it all - this is maybe the best way to grill a whole chicken - ever. Garth: I haven't seen any chef cut the backbone that way. Most of them wack them with a cleaver or fracture the bones with the fists. Perfect method herein! Thanks for sharing as usual and don't get too worried about the skin tearing away, most folks won't notice it plus, as it got cooked/seared/charred, all evidence was missing. Okay guests, come slice off what you want from these little birdies! The sides are inside on the island counter. When having a not so great day, time for the bartending guy.

You asked what the gender of the chicken is. It's female. Always female. The males are literally put into a machine that grinds them to death at, like, 3 days old. It's kinda amazing. if you love blood and gore; one minute you've got a bunch of adorable chicks, huddled up and chirping away, and then the machine gets turned on and suddenly there's blood everywhere. The chicken is always a she if you are eating it from any USA store. Males, or Roosters, are usually sold to specific Asian markets or made into cat food. All of our chicken products are hens. As you of all people should know, you should have brushed the grill with oil first, and made sure the skin of the chicken was patted dry. Then, aha! No stick.

How did you know I grilled a whole chicken last weekend? I saw that 'remove the back bone thing', but I was too lazy so I just put a skewer through it to keep it flat. What a fabulous taste it had! A forest that's been decimated by fire hahahahahaha. You're still all that and dim sum; ) Do you suppose you could marinate the chicken in that sauce?

Start with the chicken on the opposite side of the heat. bring to 140 degrees and then sear it over the direct direct heat. skin should tighten up and not stick to the grill when over the direct heat if you follow this method. Also consider cooking over charcoal. add some apple or cherry wood to the fire at the beginning.

Clip off the wing tips to help flatten. Always brine the chicken too. Don't have to be a hero can cut into two half chickens. Use foil covered bricks to keep flat. Most importantly, You Cannot touch or move the chicken until the skin is cooked. It will release naturally. That was Sams mistake.

Hey Sam, still turned out looking good. The way I usually bbq a spatchcock chicken is put a baking sheet under the grill grate to catch the grease and leave that side of the grill off the whole time. You still get the crispy skin without a flaming mess. Keep up the great content!

Oh this is definitely going on the grill this weekend. Thanks again for another DAMN tasty and simple to prepare dish. FYI one of the reasons I love your show is that your not afraid to be human and show your mistakes. Keep the videos coming.

Call it Chicken Screw UP- just kidding it's just some chicken skin that stuck to the grate, not a big deal! I do all my chicken that way, and after every three birds, I fill a stock pot full of water and goodness and in a few hours I got stock, yeah stock.
