Have been a fan since I saw the jumping shrimp salad video, squatting on the side of a street in a football shirt, when you posted it 10 years or more ago. I love how you have made a career out of that and your obvious love for food. Never had the urge to comment, but. the new style of thumbnails, the overly dramatic music and also the color grading really turn me off. It takes away from the authenticity, which I (we) love. Don't go all Mr. Beast please. I like the old Mark-ye. Straight from the soi Mark-ye. Anyway, you do you. If you really like it, stay with it. Who am I to say otherwise

Honestly I am always blown away how diverse Thai food is. And especially how flavorful their food is. So many different spices just thrown in there giving you such an interesting balance of flavors. While it may not be the same presentation as you know more western gourmet gastronomy, you can't deny that the flavor is unmatched. I love to see all the spices with my own eyes inside the plate LOL

I shudder to think how I would even cope with Dish Number One with a rating of 3! LOL! Your talent for chilli is astounding to me! Thank you for the video! (I dearly want to visit your restaurant, but I fear it! LOL! There is sure to be a difference between what you and I call 'mild', but I have to try it whatever the pain! LOL X 1, 000, 000! )

Chillies are flavouring just like others, if you overdo it the food doesnt taste good this coming from an Indian who likes eating spicy, too spicy just masks every other flavour, i want a balance

If mark wins had his arm chopped off he would probably go: 'oh. Oh wow what a tingling sensation. Oh, oh and now you can feel the warmth, the warmth from all my blood trickling down my arm'

Intestines, feet, deer, frogs. nope, NOT for me, but I will eat & drink any of those spicy spices & chilies anytime! I’m simple, chicken, beef & seafood, but extreme with my heats!

Green papaya salad are always hot if you make it with fresh Thai pepper and add sugar. In order to make it hot and not hurt later. You need those small Thai peppers.

This makes me want to revisit Thailand. Did not come across anything that spicy from the restaurants and markets in Phuket, Chiang Mai and Bangkok. Thanks for sharing!
