
The crack burger (more or less addictive than crack chicken)

50 / 50 mixture of 85% ground beef and pork sausage.
hard boiled egg
Pretzel Bun
Bourbon Bacon Jam
Caramelized Bourbon Onions
VT Maple Mayonnaise
Sharp Cheddar Cheese
Begin by making the onions. :
Preheat a grill to medium. Brush the onions with vegetable oil on both sides and season with salt and pepper. Grill until tender and charred, 15 to 20 minutes, Chop onions for desired consistency. Combine the 1/2 cup bourbon, 2 Tbsp. ketchup, 1 Tbsp. Packed brown sugar, and 1 Tbsp. Worcestershire sauce in a large skillet. Simmer over medium-high heat until the sauce has thickened and the alcohol has burned off, about 3 minutes. Stir in 1 Tbsp balsamic vinegar and add the onions. Season with salt and pepper. Serve warm or at room temperature. Set Aside.
Ive seen you make Bourbon Bacon Jam so I wont include my version cuz its actually your version. Kudos. Its delicious.
Be sure to have one Hard boiled egg prepared ahead of time
For the Patties:
Combine 1 lb of 80-85% lean ground beef with 1 package of your favorite brand of pork Sausage.
Once combined make 2 1/4 lb patties pressed flat but not Smash Burger flat.
Slice up the egg and put two slices in the center of the pressed patty and cover with the second patty sealing the edges to avoid breaking apart.
Bread the Patties as you would a scotch egg with Seasoned flour, Egg wash, and Bread Crumbs.
Fry patty until golden brown.
Note: Dont make the patty too thick as the breading will burn before the meat is entirely cooked
Construction:
Toasted Pretzel Bun
Spread Maple Mayonnaise on the bottom bun
Caramelized Onions on top of that
Place patty on top of the Caramelized Onions and top with slice of Vt Sharp Cheddar
Spread Bacon Jam on the top bun and place on top.
Dont have a name for the Burger yet but its so good who needs one\n

Stuffed back strap
Elk is preferred, any back strap will do
Ingredients:
1. Roughly 1ft of back strap
2. 8oz Cream cheese
3. One large lime
4. One cup finely chopped mushrooms of your choice
5. 1/2 cup chopped cilantro
6. One full package of bacon
7. Salt and pepper to taste
Recipe:
1. In a large bowl, mix together cream cheese, chopped mushroom, chopped cilantro, and a large squeeze of lime (to your liking.
2. Lay out bacon vertically, side by side like a bacon blanket.
3. Butterfly back strap, lightly season inside with salt and pepper.
4. Lay back strap onto bacon (perpendicular to how the bacon is laying)
5. Fill inside of back strap with cream cheese mixture and close. Wrap bacon around entire back strap, and secure with as many tooth picks as needed.
6. On a charcoal grill, cook wrapped back strap until bacon is crispy and internal temp is 125 (or to your desired doneness.
7. Slice into medallions & serve.

Stick it in the coals of the fire until it gets red hot.
Insert the hotdog on the hot fork slowly and it will make a steaming sound. This is cooking the hotdog inside out.
Put the hotdog bun on the hotdog while still on the fork and continue cooking over the fire until nicely charred.
Build and enjoy!

Nice burger! I'd put a slice of onion on it and some pickles. I may or may not lightly saute' the onion first to bring out some sweetness. I'd have to try it both ways to see which one works better.
Then for the next two day's I'd have to eat plain white rice to balance my system out again. Holy sodium, Crackman.

I never thought about putting sour cream in while mixing the meat for the patties, but I will the next time. I love to experiment when cooking dinner some are a winner and some go horribly wrong.
