I was with you up until you put an egg ON a chicken breast. Sorry, that skeeves me out. lol It's a little too Leonard-Lake-and-Charles-Ng-like. I like a lava yolk egg with crispy brown lace on just about anything else. It's a me thing.

You don't need the chicken to hit 165 with sous vide that's the whole point it pasteurizes the chicken. With sous vide you're cooking at temp not to temp like with conventional cooking methods

Just done chicken pieces, salt peper and mustard, then breaded, into the fryer. freekin lovely. mayo dip, perfect with my Moscow mule. Thanks Sam. see you next Friday
