Bob's not my uncle and I just don't know Sam. Iowa girl here (that lets you know I think I'm an expert and we know our cattle: ). Reverse sear? The whole point is to 'sear' in the juices. .. didn't render any fat either. I like it rare but I could hear a faint Moooo. Maybe you better get off that ankle a little longer Sam: ) I just don't know about a Canadian/San Francisco boy giving steak advice. . Lol, stop swearing Sam. .. just giving you a little crap! No! Way! I will sear my Two Inch Ribeye steak or one bone Ribeye. Take off heat let sit and when I have a few Cocktails or whatever I cook at 200 until 125 internal butter and sit for ten minutes! And BOOM

How long did it take to get the steak to that doneness in the oven at that temperature. looking to try this and trying to figure out time management with the rest of the meal

I used to do this, but now burn the shit out of it 1-2 mins on an open flame per side first then slow cook it to temp, much better appearance and fat for flavor.
