Okay, while I'll admit this didn't cook exactly like I wanted it to, it tastes exactly like I wanted it to. delicious.
Hollis: it helps to add some chickpea flour to the ground mix. also, i use za'atar, more cilantro than parsley, and lime rather than lemon. i also add minced (unseeded) serranos. i just remembered that i forgot to tell you about this particular recipe you MUST try (if you haven't already) -- Charred Cherry Tomatoes Served Over Cold Yogurt. i figure you might sub sour cream for the yogurt, since that seems to be the way you lean. but you basically char cherry tomatoes with fresh chopped garlic, herbs + EVOO under the broiler for several minutes, then serve over yogurt that's been mixed with some lemon zest and salt and kept chilled until ready for service, at which time you take it out of the fridge and spread it on a plate, then take out the hot, juicy burst tomatoes and pour everything over the yogurt slash sour cream. it's from Yotam Ottolenghi's Simple cookbook -- in fact, that recipe is the reason i got the book. (i know, Ottolenghi is so trendy and all, and he relies on a very specialized (Meditteranean + Middle Eastern) pantry, but his recipes are awesome) Date: 2020-05-27
