Jeju Island is home to some of the freshest Korean seafood and today we’ll be finding some of the best seafood dishes, including one type of seafood I just can’t fully enjoy! I wish someone taught MarkWiens how to properly eat and debone a hairtail/belt fish by removing dorsal (top) spines, then the pelvic/bottom spines first.
1. Lay the fish flat on your plate.
2. Along the top edge, use your chopstick to trace/cut a shallow line right where the spines run, while gently pulling the dorsal spines out with the chopsticks. Done right, that strip of spines slides out as one piece with minimal meat loss.
3. Repeat on the bottom edge to remove the spines/bones running along the underside.
4. With those two strips removed, the fish is basically all meat. Now just lift the flesh away from the main backbone and eat.
If you don’t debone it first and eat it like Mark does, you’ll spend every bite picking out sharp, spiky bones instead of enjoying the fish.

Sea squirt, aka sea pineapple, has such a unique taste, some might call it chemical, such that there are a lot of people in Korean even, who can't take it. But like a number of dishes in Korea, it takes maybe fourth, fifth try and then you begin to think, Oh, I get it now. I'm a Korean myself and no, I have yet to ever say, I want some sea squirt in my life. To each his own.

I shop at H-Mart, a chain of Korean-American stores here in the US, from time to time. I have found beltfish there a few times, but it is always rather expensive, and still they sell out fast. Must truly be a favorite.

Jeju cuisine is both familiar and unique to Koreans. I love this content because it offers a lot of dishes that bring a sense of motherly warmth, something even inland Koreans find completely unfamiliar.

I'd probably try the sea squirt just to say I tried it, but from your description, I probably wouldn't like it either. Ammonia flavor sounds nasty.
I'd tear up those snails, though.

If you are still in Jeju Island, I would really like to invite you to the restaurant I run. In Jeju Island, the sea is located in Woljeong-ri, which is especially beautiful.

1: 59 You’re correct, they add the abalone innards to add that certain abalone seafoody flavor to the soup. Looks absolutely delicious.

Mark. there is no shame in blowing on your food. Second degree burns in your mouth wont enhance flavor! Let it cool down and THEN try it!

Korean food is the most inferior out of all Asian food in the far east. it will always be inferior especially to Japanese food

I've become so addicted to the crunch of the Nori seaweed, I buy the snack-packs in bulk. My favorite flavor is Korean BBQ.

I’m the same as you Mark, I’ll eat anything but sea squirt and favourite dish definitely the hairtail soup (with rice)
