OMG I'm cooking this exactly species, brassy trevally. It turned to be my favorite fish. I'm aging it for 3 days for gaeng som, and I'm using fatty intestine too, aging ribs for a 5 days for BBQ, and aging fillets for a week of two for sashimi. I didn't know here is gaeng som paradise in phuket. I'll definitively give it a try!
P. S. now I know why it's so hard to buy this fish. They all going to that shop!

They may be clean and have a clean kitchen but you being in it filming over the pots you dont know what is coming off your clothes with your arms flaying about. Anything could be on you and land in that food. A total health and safety wrong doing. Why are they wearing aprons and hats if anybody can just walk in and do what they want.

I am born and raised in Cape Town South Africa I have been to so many countries and Cities and been to Phuket two years ago and fell instantly in love with the place I now so badly want to go live there just for the food and the weather and the amazing Thai people I can't wait to some day call this place home Phuket Thailand rocks

half boiled egg is yummy, but at the same time also risky to consume, because it may contains salmonella bacteria that still surviving, it may harm your health especially stomach. i was fans of half boiled egg, but now i try to avoid it.

16: 18 the long white bearded guy sitting right behind you is a legend himself, pretty sure that's the owner and pitmaster of Hogfather BBQ in Chalong Phuket, the only real BBQ in Phuket. Hope you can try it sometime.

It always amazes me just how inexpensive some Thai cuisine is! Here in the US, any of these dishes and spreads would cost triple or even quadruple the price. I'd love to go to Thailand and try all this food.

That crispy pork for breakfast looked amazing! The buffet curry place looked good too. You're right, there's always chili & vinegar available at most tables in Thailand. ps. Does Micah eat spicy food too

Bihoon literally sounds like rice vermicelli in Taiwanese, which is a southern Hokkien dialect, almost identical to Amoy. Mee is how Taiwanese say noodles, usually wheat based.

I can’t believe that 80 year old chef is getting flame broiled on his hand and arm like that! He needs fire retardant glove on that goes to his elbow. Safety first.
