We are currently under a heat advisory all summer long, but I am dreaming of cooler weather and fall recipes. Today I am making homemade chicken and dressing with chicken gravy from scratch. CHICKEN 4 to 5 lbs chicken drumsticks 2 to 3 quarts of water 3 Tbsp chicken bouillon powder 2 dried bay leaves 3 to 4 cloves of garlic a medium piece of onion 1 celery stick 1 tsp poultry herb blend 1 tsp dried thyme CORNBREAD 1 1/2 cups yellow cornmeal 1 cup all-purpose flour 1 Tbsp baking powder 1/4 cup sugar 1 1/2 tsp salt 2 large eggs 1 cup milk GRAVY 4 Tbsp unsalted butter 2 Tbsp chopped onion 2 Tbsp chopped celery 1/3 cup all-purpose flour 4 cups chicken broth 1 1/2 tsp chicken bouillon powder half of the cooked chicken salt and pepper to taste DRESSING crumbled pan of cornbread half of the cooked chicken (chopped) 11 oz cream of chicken condensed soup 2 to 2 1/2 cups chicken broth 4 Tbsp butter (for saute) 1 small onion (sauteed) 1/2 green bell pepper (sauteed) 2 celery sticks (sauteed) 1/2 tsp cracked black pepper salt and seasoning to taste CANDIED YAMS 2 medium to large sweet potatoes (500 g peeled) 1 1/2 Tbsp unsalted butter 3/4 of a packed cup of light brown sugar 1/4 cup water 1/2 tsp salt 2 tsp vanilla extract 1/3 cup chopped and toasted pecans 1 tsp ground cinnamon

looks great! have you ever tried cream of celery soup in dressing? I really like it; the celery note isn't too strong. it's REALLY good in tuna noodle casserole -- that's my gourmet tip for that, LOL. now I'm craving dressing! I love the idea of deliberately making the cornbread dry -- I'll try your recipe soon!
and NO you're not alone in being ready for fall! it's so hot here in Texas.

(We live in South Florida, it s brutally hot, as I know you are there in Texas, too never a real change of seasons, so, like you we always look forward to Autumn, for the good feeling, the great food, and the fall coziness)

I'm in Corpus Christi and quite honestly it's too hot & humid for me to be thinking about Fall dishes.
But hey why not?
This recipe sounds really good so maybe I'll make it this weekend.
I think I'll use turkey wings though.
It's just for me & my wife and HEB always has two packs of turkey wings for sale.

Looks delicious! For the last couple of weeks, dressing has been on my mind and have mentioned it to my husband, but have yet to make it, this is a great incentive, so maybe for the weekend. And as hot it s been here in Texas, chicken and dressing reminds me of cooler weather. YUMMMMM

Thank you! I am going to make all these dishes, yum! I feel bad when you have to tell people to season to their tastes. Duh! Watching videos is for instructtions, but mostly inspirational to the home cooks. That is why so many watch. Keep up the good work! Stay cool!

You have so many delicious recipes I don't know which to choose from. I had on my mind yo try your enchiladas but now looking at your chicken and dressing I want that now. You make everything look so easy. I could eat this in the fall and every other season.

I almost cried when I saw you mixing the aromatics. My mom taught me how to make her dressing and although I use a green bell pepper, I use the onion and the celery as well. And I am like you; I cannot wait until this horrible hot weather is a memory.

I just love your recipes thank you so much. If you want You're dressing to be more dry use 3 or 4 pieces of white bread put them on a rack overnight to let them dry out then crumble them up in your dressing mixture.
But I'm sure you already know that.

Yes you are right but living in the hotest State of Arizona you don't want to use your stove or oven we have been eating a lot of ell polo loco chicken i love it expecelly the rice with fresh salsa that i make at home.

Oh my gosh! Houston has been so hot this year that all I wanted is icy cold fruit and salads. I understand what you mean about the fall food though. I'm going to be making some zucchini muffins this weekend.

This looks wonderful! Delicious fall goodness. I am so over this hot hot Summer and ready for Fall and Winter and all the yummy comfy foods. As soon as its cool enough to use the stove again will try this.

We all seem to be on the same page. My mom and I are already shopping for thanksgiving (dry goods or freezer. I know Texas will still be warm but I m ready for it. Oh, we add a ton of sage!

I know you don t want to dirty up another bowl, but please just put it all in a big bowl to mix. It s so much more satisfying for everyone, especially you! Big bowls for mixing are the best!

I am also ready for fall, looking forward to chili, soup and casseroles. some of the stores have Halloween candy and decorations out so they're probably making sure we are ready for fall.
