You forgot to teach how to CLEAN the Menudo before you cook it. This is a very very very important step that you cannot skip. If you don't wash the Menudo really good it will come out really bad. Why. Because the raw menudo stinks from the cows waste. You have to wash it at least 3 to 4 times or until the bad smell is gone with 4 Table Spoon of Vinegar, 4 Limes Juice and 4 Table Spoons of Kosher Sea Salt. Rinse with cold water and in a pot add the Vinegar Lime Juice and Salt and keep changing the water at least every hour and keep it inside the refrigerator then change the water and repeat the process till it does't smell bad. Also if you buy the menudo whole don't cut it into small squares because as it cooks it shrinks. Cut it at least 2 inches. Well that's how I clean the Menudo other people just use Lime Juice and Salt and scrub each piece and let it rest for up to 4 hours and thats fine too. But I learn from a Mexican Lady that sells menudo in Mexico that with Vinegar it comes out very clean and removes the bad smell. There are diffrent kind of Menudo meat one is a Dark one called Menudo Moreno that will not turn white even after you washed it and it's also the cheapest. also on the back of the menudo if you see any thick white grease on the meat remove those chunks of fat and grease. That cause the menudo to stink.

I live deep down south texas. So close to Mexico I can piss on the walls and no one would even bother me about it. With that said, I live in menudo town. We all have menudo pumping through our veins. I still dont know how to make it after 36 years on earth. So today I decided to get all the ingredients, and cooking equipment together. I followed all of the steps in the video, and read your replies to each and every comment. 6 hours in and I've just finished adding the hominy. I'm going to leave it on low heat another 2 hours (just to make sure everything is soft. In the meantime I'm gonna cook some homemade flour tortillas, cut the limes and cilantro, and make myself a gigantic bowl of what smells like authentic red menudo. I'll edit the comment (if I can) and rate this recipe accordingly.

I love your videos, but please don't play music while you are talking. It's hard for older people to understand what you are saying and it's so distracting. The music all through this particular video is so annoying. It just ruins the relaxing and entertaining affect like most of your videos have. I know this is an older video. The recipe looks delicious!

This makes me miss home so much. I joined the Army straight out high school almost 16 yrs now n I never learned to make this n woke up with a cruda. Nothing was open where I m at. It s almost nighttime now I ve been watching all your videos. I m going to the store I swear but first I m calling my mom cuz I miss her. Thank you for sharing all your videos

Thank you so much for this video! I am attempting my first pot of menudo for New Year's Eve tomorrow. I made the chile sauce today and put it in the fridge. I am leaving out the trotters since it's my first time but will definitely add next time depending on how I do. Lol. God bless you and Happy New Year!

Why did she do that at 4: 43? Is it not edible or is it just personal preference? I would really like to know because I have always ate it and it is good. I've never did what she did there. Was I eating it all wrong this whole time? I genuinely would like to know. It never bothered me.
