His Mac&Cheese recipe isnt specific enough. He calls for American cheese and Velveeta cheese. Velveeta cheese IS American cheese. Unless he wants you to use the cheddar Velveeta which he should specify. Ima say use the Cheddar Velveeta because most mac&cheese is made with Cheddar.

Personally I would just eat that roast in slices with some potato or bread dumplings and the salad and thee onions. Would probably make a sauce out of the juices to go with the roast.
