I’ve made several basque cheesecakes recently, using several different recipes. I learned a hard lesson on my last one. Let the cheesecake cool for a couple hours and then stick it in the fridge, typically overnight, to let it further set. I let my last one cool, but was impatient and tried to lift it from the pan without the refrigeration. Being soft (softer than Chef John’s, it broke apart. What previously looked absolutely beautiful, now looked like a dog stepped all over it.

Dude, you have great recipes but why do you do the young female influencer voice I find it too annoying to watch the whole video. You don't need to have every single sentence end on a higher pitch word. Not every sentence should be a surprise or sound like a question. I'm seriously here to give advice because I think your content is quite good. Music and editing is great too. I hope you see this as constructive feedback.

One of the best ways to avoid cracking on any cheesecake recipe is to add the eggs last and do not over mix. Whipping eggs incorporates air, which will eventually collapse from the weight of the batter.
I wonder if some eggnog could be incorporated into this recipe I love to freeze some cartons of eggnog and use them in French toast. in the summer. Thank you Chef John.

It's always interesting watching some other cooking videos that try so hard not to copy Chef John directly, you can see that they catch themselves from saying things like give it the ol' tappa, tappa, then get a little snarky if someone in the comment section follows through and makes the statement.

How would I adapt this recipe to make smaller, individual servings in something like a muffin/cupcake tray I’m thinking higher temperature, shorter cook time to try to get a similar well-done outside, soft wobbly centre

I make a, little thicker than usual, cookie dough flavored with candied orange peel and lime zest. I put it thru my pasta roller and line the sides of a 12 spring mold, then pour in my cheesecake batter.

No water bath I have always baked mine with one. The texture ends up being softer to the palate. But this intrigues me. I i will follow the recipe as is, then make a 2nd with the water bath.

This is very similar to the cheesecake we make in (east) germany! I'd love to try this version someday, I love christmassy baking

i do cheese cakes cuz im lazy. i think u put more effort into those snowflakes that i did into my last 3 cheesecakes combined
