This fajita cheeseburger was inspired by the viral Mexican cheeseburger, and if you’re looking for a way to spice up your burger routine, this is the cheeseburger for you. I used to go to a cafe that grilled Reubens with Thousand Island dressing on the bread. I tried making grilled cheeses with different kind of salad dressings, Italian, Ranch, Greek, and on and on. I even tried using mustard on a ham & cheese. Not bad. I finally settled on mayonnaise. It spreads more easily than butter, and it doesn't soak the bread like dressings can. My wife thought it was odd, but now I have Chef John's stamp of approval.

What does this have to do with fajitas
1) Vegetables don't make fajitas. Fajita means belt, since fajita refers to meat from the belt area of cows, most specifically skirt steak.
2) This isn't even proper rajas, the vegetable blend most commonly served with fajitas: bell peppers, onions, and poblano chiles.
This is just a hamburger with seared vegetables.

Used to cook at a local restaurant. The owner and kitchen manager would argue for HOURS about the food safety around toasting the hamburger buns with mayonnaise. Would anyone like to chime in on this
I never toasted the buns with mayo when the kitchen manager was around, but when I did (after he clocked off, none of my customers got sick when I did!

Nice, my local Mexican bar / restaurant has better burgers then the local burger joints and you can just order them with the fajita onions and peppers. What gets really crazy is getting a burger with queso instead of any firmer cheese (aka nacho cheese sauce, it gets really messy and I'm tasting it in my beard for hours but it's worth doing.

I got a food wish. I don't even know if this could work. Think cornbread with stuff in the middle. OK that may not be accurate. No open sides, literally like a casserole with meat and onions and peppers maybe I can't draw but if I could. The cornbread would be a box and the stuffing would go into the box.

Everyting tastes better when it's made with the freakishly small wooden spoon! And, this burger sounds delicious! And, doubled butttered hamburger roll sounds wonderful similar to the inside out grilled cheese. Btw, i like medium rare steak but medium well done burgers

I do not know if that was a brioche bun, but I am unashamedly using this opportunity to share an unpopular cooking opinion that toasting brioche buns takes away from their texture and should not be done. Thank you for coming to my Ted talk.

I know many people prefer mayo over butter for roasting buns or grilled cheese sandwiches but I think it's inferior. Butter gives a nicer crust and tastes much better. Having said that, I love mayo inside any kind of sandwich.

Funny, I was just thinking to myself: I bet this would be great in a smashburger variation and you started talking about doing a smashburger version. Definitely think that would be superior and you should try it.

To any’ol taco seasoning mix, maybe have to augment it with a bit more Mexican Oregano
And
It is regularly half the price of Chili Powder.

I dont think you can call that a fajita burger. you served it on a plate, and not on a cast iron skillet that was preheated under the broiler for an hour for no apparent reason. Amateur hour

I am shocked to have seen a YT chef cooking meat all the way through. I can only hope this becomes a spreading trend. Now, if only we can get them to stop overusing mayonnaise.

Use your favorite bottom bun. Use a lightly toasted corn tortilla as the top 'bun'.
Maybe some cojita cheese for extra points.

I too like the wider, thinner approach to burger cooking vs the smaller thicker method. Oklahoma Onion Smashburgers has changed my life. LOL.

Fajitas in my area do not have jalapenos on them. So I'm curious why you choose those over green peppers or green red and orange peppers.

For added flavor use Japanese mayo instead of American. It’s sold as Kewpie in the ethnic section and your local Asian markets.
