With zabaglione if one wants the best texture (no burned yolks) and flavor, vigorously whisk caster sugar little by little to the eggs to form a soft lemony ribbon prior to cooking the custard. This aids texture and volume. And then you begin cook the custard base over steam till light custard trail just begins to form, slowly whisking in warm marsala AFTER that step. This will preserve a little more punch and bloom to the wine.

At the 13 Coins, in Seattle, they use round bottomed copper pots, with long handles, and whisk the egg/custard directly over a decent size open flame. Very fast But, they use the egg shells as a 'measure' device. one egg yolk, half a shell of sugar, half a shell of Grand Marnier. It's pretty impressive, actually. but, that's part of the fun of going to the 'Coins

I love you, Chef John. I have never made this but will. And therefore I get to purchase a torch My husband will say more kitchen stuff? Where will you put it? In the freezer? Under the bathroom sink? The crock pots are in the linen closet, the deep fryer is in the garage, the Instant Pot lives on the kitchen counter.

I just made this with orange juice instead. INCREDIBLE Thank you ( I usually watch these stuff without doing them but I did this time, as an algerian I had to add a bit of orange blossome water to the strawberries though of course: DELICIOUS. Thank you my mum loved it ( yeah i'm single)

fantastic looking, and i'll have a go at this dessert. on another note, i was rather distracted by the quivering volume and cadence. it doesn't seem that his delivery is contrived, but if i explore more of these videos, i may need some coping mechanism. chamomile tea?

I can't help wondering if this would also work with field-ripened pineapple and banana grown locally. I live in Hawaii where we get this stuff nearly every day. Wish I could give this 20 thumbs up

made this with a mixture of dark rum and orange juice instead of wine and served it over blueberries. turned out fantastic and Ill definitely be using this technique again
