-GigaBoost Not a big difference, stock is made from bones, and broth is usually made from meat and bones. They both include some vegetables like celery, onion, carrots, and herbs. Stock ends up being thicker because of the proteins and minerals in the bones. You can substitute one for the other in this, no problem.

-Fancylooks Yes, you can poach raw chicken in the broth before adding the vegetables - no problem. I think I know what you mean, though. A lot of times chicken gets kind of tough when you reheat it.

-thelumbahjack I wrote about it on my website! If you look up the recipe for roasted chicken, I tell you how to do it at the end. It's easy! I do it all the time and freeze it in quarts for soup. Yum!
