I'm thinking the structural problem was created with the damaged pancake she used. As she would twist the stack to correct the center of gravity, the damaged pancake was getting even more damaged by the compression and torque. She may have gotten more on the stack if she hadn't used that one, damaged pancake. Fun video

You should try it with Dutch pancakes. They are giant bricks. I'm sure one day they will be able to bake them in a way to build houses with it. -

If there were two stacks side by side & balance pancakes across both, more than 58 might be possible since there's a wider base.
