This looks pretty simple and went together fast. Sun dried tomatoes seemed to be in everything back in the 90s. I didn't think they were still a thing.

I heard that with rendering meats like bacon and pancetta it's best to start with a cold pan and gradually let it heat up. But then I thought, what about all those diners that just toss bacon on a hot griddle? Maybe they're not concerned with rendering as opposed to just frying the meat?

Yummy! Here's something I've not seen anyone else do before: my mom used to make chicken tacos, but instead of plain soft flour tortillas (or packaged corn shells) she would oil fry flour tortillas into a taco shell shape. They were delightfully light and crisp and delicious and paired really well with the chicken. Then fill with the chicken and all the usual fixings. Would you be interested in trying that?

I've been making a similar, yet different, dish for years. We prefer fresh tomatoes instead of sun dried, and fresh basil instead of dried thyme. I add in a pinch of old Bay for a creamy Cajun twist. And I've never thought to add Dijon Mustard to a dish like this. That's strange to me. But, my version is bomb. We have it over angel hair pasta.

This looks terrific! I definitely want to make it. Nice touch with the pancetta. With the sun-dried tomatoes, I would do a rough chop on them to make much smaller pieces or put them in my little mini prep to chop them into a puree. Great flavor but better texture.

I've seen a Creamy Cajun Chicken that was very close to that chicken. I don't like saying that Marry Me chicken name. How do you tell your kids we're having Marry Me chicken for dinner? That's just weird.

next time you need to use sun dried tomatoes try putting them in your blender/ food processor. That way you get the wonderful taste w/out the nasty texture of the sun dried tomatoes! Luv your vids.

Wow! This is literally like 1st year cooking school. Or I made similar when I was younger and was starving. It s still good however. But super simplistic/ not sophisticated and not amazing.
