Crispy french fries, gravy from scratch and of course cheese curds. classic Canadian poutine at its best! Mike: My heart sank when you started building the poutine in the cast iron pan, as I thought for sure you were going to put it in the oven to melt the curds. Thank you thank you thank you for doing it justice. You hit the nail on the head, hot fries and piping hot gravy is the key. Also I'm with you on the preference for a thicker gravy as it doesn't make the fries soggy.

Dear Max, as the producer you CANNOT allow STCK run out of paper towels to blot his mouth and forehead. Send your gaffer/gopher, Chancy, Chancey, Chauncy out for a few hundred new rolls. After all the Stones always have NEW Batteries in their packs for each show and Stevie Nicks always has a pick holder FULL of picks on her microphone stand!

Maybe this is obvious to every one else. but when you said you were going to mix both chicken and beef.
was it broth (from a carton) or reconstituted bullion? or something else all together? sorry if I missed it.

We grew up eating that stuff almost everyday in QC, Canada! Poutine is simple and delicious, you did it right! Currently living in the US and cheese curds are hard to find. Headed to San Diego to buy some cheese curds!

Gravy w/ fries is a delicacy here in West Texas as well! White country gravy/pepper gravy and brown; white is the preferred one for most people including me, but brown is good too.

One of my favorite beers is made by Ale Smith The Horny Devil. Belgian with orange it was so good. Havent been able to get it in around 2 years though lol. Sad times
