Sam and Max, I made this very dish tonight for the first time, but we substituted some things. Didn't fillet used ribeyes. Made the sauce, made the spinach. My family couldn't believe we made it in our own kitchen. That reverse sear method was perfect! No grey anywhere, juicy. The sauce was a great kicker and used fresh lump crab meat. Holy crap. Thank you so much for what you do.

I went to buy steak at the grocery store, but it was almost sold out because of the pandemic. The only steak left was Filet Mignon. So I bought a bunch of it. This method is the complete opposite of what I learned, but looks like a damn good method. Cook to temp in the oven, THEN pan sear and butter baste. Looks like a winnah!

My neighbor and I cook together alot although I love to cook technically he is a chef. I bought some beautiful us prime fillets last month and he made a bearnaise sauce to go with it. Didnt have the crab to go with it but one of the best combos in the world! This video was awsome. Also spinach and bacon together are the bomb

God! Sam. That is not how you make bearnaise. It needs a bit of heat and it should start being a bit like a mayo, and don't pass 49 deg celsius or it will separate. When you have melted the butter you need to let i rest, and separate it. Don't use the yellow stuff, it will make the sauce bitter. Cheers!

Great looking steak. Filet mignon is my favorite cut. I cook mine with a sous vide circulator and them sear it after. Perfect medium rare wall to wall every time. I'm on the keto diet so I'm switching to ribeyes. BUT, I'm definitely making that creamed spinach soon! Thanks, Sam!

Although that filet looks really tasty, I don't think I could do that to that cut of beef. I do use the reverse sear method and it's excellent but the most I put on a filet is my coffee rub. Most of the time it's just S&P though.

With all the stuff that you put on your me and everything how can you even enjoy the flavor of what you're cooking I tried some of your recipes and the seasonings are so overpowering you can't even taste the main dish

If your piling all that crap on a filet, you cant cook and dont have tastebuds! Wrong pan=inexperience Whipping cream? Hell no! Maybe heavy cream but whipping cream has sugar in it=more inexperience

Did you just heat up the crab? Did you season and heat? Omit dont think you would use cold crab but considering you just put it on top with no instruction, it doesnt take away that it may be cold.
