Pommes Darphin is a fancy French way of saying one the the best hash browns you'll ever eat. In this video, Jeremiah Stone-chef and owner of Contra, Wildair and Una Pizza Napoletana in New York-will show you how to make this fancy French hash brown which also happens to be a classic dish any culinary school grad knows. Crispy on the outside and hot and creamy in the center, this butter-bathed fried potato dish is cooked to a golden brown and topped with a quick pickle of a jalape-o and onion relish, and then a little foie gras of the sea-uni. You of course can just top these perfect hash browns with a fried egg and call it a day, but if you're feeling a little fancy, this is how you treat yo'self

I love the variety of hosts. It really gets weird/rude when you have seen a host, cook/eat/travel more meals than your own mom, wife, or girlfriend etc. no naming names here. I can-t wait till more travel shows start using drones instead of hosts. I saw a tour thing like that on on YouTube, I forgot what it was called but it was really relaxing to fall asleep watching. It came of like virtual reality because of the POV, just floating along in Italy.

Dude you should WASH the potatoes after you cut them up to get ride of some of the Starches. A quick rinse under cold water can wash away much of the surface starch. More starch is removed from a cut potato than a whole peeled potato, because a greater surface area is exposed on cut potatoes. Soak them in cold water for as long as a few hours to remove more starch than by rinsing alone.

just a little snack aye? -its fine dining food- presented in a casual, home food context- i dont think it works here- as a dish or as a recipe anyone would ever try. would have been better to either present the dish as a fine dining dish- in its restaurant context- or homify the food a bit- eg subsitute the urchin for some egg or another ingredient thats approachable.

funfact theres no need to peel potatos since they are a rootvegetable meaning that it isnt exposed to chemicals the same way as a fruit or anything aboveground would be(obviously only if irresponsibly sprayed with insecticides/pesticides. so grow your own: . you can adapt that to all roots/rootvegetables.

ALERT: for all of you who are concerned that this is a misspelling of -Dauphin- as in -Pommes de Terre Dauphinoise- this is NOT the case. Darphin Potatoes are named for the chef who created them. At least that is what Jacques Pepin says on his website, and he is the Shiznit Francizzle. Assez dit.

Why even use a jalapeno is gonna take the seeds out? The point is to get the heat from it. And I truly don't get why Sea Urchin would be a good thing to go on that. seems like something just to raise the price of a menu

The video is great, but i have a crit: The music on this video doesn't fit and regularly distracts from the content. Stick with a single track for more cohesion, the vibe kept changing.

I thought I washed my hands good. But when I went to theB-room, HOT! it was good that I washed my hands but it was still warm and I hoped it wouldn't get hotter, whheeeoo sigh.
