A classic tiramisu recipe usually has lady fingers, drenched in coffee and cognac with a cream layer that often turns everything into a pile of mush. Is it bad? No. But can it be improved on a little bit? Yes. Fabi-n Von Hauske-chef and owner of Contra, Wildair and Una Pizza Napoletana in New York-has one-upped the classic Italian tiramisu recipe by making his own sponge cake that stands up to the coffee-and-liquor-soaking process. And instead of plating in a big dish that you cut squares out of, he makes individual tiramisu portions that can easily be served at a dinner party, that look beautiful and have a bit more texture. In this video, he will show you what kind of rum and coffee work best and how to get the mascarpone cream light and fluffy. His version of tiramisu is one of the best desserts in New York City, currently on the menu at Una Pizza Napoletana

I love how in the beginning he said no body likes tiramisu cuz it's a squishy soggy dessert, yet near the end his tiramisu came out light and not set oxymoron much? if he wants a better version use whip cream instead of egg whites as egg whites tend to liquify after a while. good job though

The recipe calls for 12 large eggs (separated, as well as 6 egg yolks for the cream. -So, do I use 6 eggs yolks + 12 egg whites for the sponge cake, and the remaining 6 egg yolks for the cream? -Or 12 eggs total for the sponge cake and an extra 6 egg yolks for the cream?

This dude really added a caramel top and thought he changed the dessert. If I wanted the crunchy top I would just make a Creme Brulee. No one is traveling that far for your -special topping-. I'll go down the street.

You mean there are people out there who don't like regular Tiramisu? I don't want to know them. Love this dessert and this looks like a very good twist on the original, well done!
