Georgian food is becoming more widely known and more widely appreciated. With restaurants opening, typically in the bigger cities here in the U. S. For example, in Washington, DC, where I am, we now have several Georgian restaurants where we can enjoy khachapuri and khinkali. The boat shaped Adjarian khachapuri is really good with the cheese and the egg. And, the extremely moist and tender filling of the khinkali is wonderfully delicious. They are an analog and a rival to Chinese style soup dumplings. The khinkali may even be better, frankly.
