Congratulations Maangchi! You successfully converted my American husband into a doenjang stew fan! _ Before tasting this recipe, he was FOR SURE he would never eat doenjang stew again (after trying it just once, though he loves most Korean food (especially the very spicy dishes.
But I told him that this recipe of yours is different, special and very delicious, and that I had never even heard of it before, and I was born in Korea, lived there from 7-17 years old, was stationed there for three years as an adult, and absolutely LOVE Korean food.
When I was in the Army, I knew a lot of American soldiers (mostly Korean Linguists and/or Analysts) who loved various kinds of Korean food, but I didn't know a single one who liked doenjang stew; however, I bet they would LOVE your version!
After I took one bite for the first time, I was like, Where the heck were you all of my life! And after my husband tried this VERY savory and hearty stew, he said, Oh yeah! Let's put that on the menu (menu meaning our regular, favorite recipes that we usually eat each month.
My husband even enjoys your videos that's uplifting and interesting.

Hey Maangchi today I Preparid Thik soybean paste stew.
It was the first time I had the chance to try soybean paste.
The taste was completely different from my expections. What I mean. I was little bit scared to try it because you said, it's smells wreid. BUT I loved it! The smell and the taste wow, I'm so excited I ate much more than usually so my stomach hurts now haha.
Every time I try a new recipe I feel like, I have found a new favorite dish.

I love your recipes, and I really, really love that you do all the prep work yourself and actually cook each dish that you demonstrate. So many celebrity chefs on TV just play at cooking; they have the assistants doing all the work behind the scenes and just pull out the finished dish. It's clear that you can cook and that you truly love sharing Korean cuisine and culture with the world. Thank you.
I also admire how you can stuff so much food into your mouth in one bite, all with perfect manners and etiquette. It's an art form!

Brown seeds are not bad. I use brown seeds in some of my dishes and they give the foods more flavor. They flavor the dish like charring or roasting veggies, sesame seeds or other foods that browning gives and extraordinary flavor too to bland foods

I'm going to make a vegan version with chantrell, enoki, and oyster mushrooms, and switch the potato for daikon since I can't have nightshades, and leave out the onions - but add asafoetida for oniony flavor. Can't wait to try this on a rainy day.
