When we Filipinos introduced to us spaghetti, we reinvent it according to our taste. But the world love it that is why we have sweet style filipino spaghetti sauce. And then Carbonara came to our Filipino table in late '90s. We also reinvent it again. Italian react to our version of Carbonara in nestle cream. We love culinary from different country like Italy but we put ingredients available in our country.

WROOOOOOOOOOOOOONG! CARBONARA WITH GARLIC, BUTTER, OLIVE OIL, PARMESAN CHEESE AND PANCETTA IS A CRIME! YOU MUST USE PECORINO ROMANO instead of parmesan and GUANCIALE instead pancetta! Jamie Oliver and this guy are a TOTAL JOKE, A REAL BAD JOKE WHEN YOU COOK ITALIAN RECIPES. TOTAL FAKE!

I love Gennaro, he made this same recipe in a different video, however he didn't use the garlic or butter. I made that recipe and it turned out amazing. So if you're watching this and wondering if you'd need all the butter, you don't.

Just goes to show how retarded some italien chefs are that stay in italy. DON'T CHANGE ANYTHING IN THE RECIPIE ITS NOT CARBONARA. Italian guy that haw seens things: PUT GARLIC AND BUTTER IN. you know why. cuz its freaking 10x better.

pero nooo cavolo, cavala la padella dal fuoco quando aggiungi uovo, niente burro, la devi condire solo con il grasso e poi l uovo, non metto in discussione la bonta pero e' pesante troppo cosi

Guy is annoying! Cook and instruct please, we don t need the Tarantele Dance and the Hand puppet show! My grandfather was from Naples along with 6 aunts and uncles and not one acted that way.

Come on Gennaro, you know that in Italy we use guanciale instead of pancetta, no garlic, butter or oil, pecorino romano instead of parmesan. Why don't you use the traditional recipe?

I personally think that garlic is not needed. I used only olive oil and put some strong red wine on the bacon - never cooking water. The egg cream must not be liquid at the end.

This was awesome. Thanks for the instruction, family ate the entire batch, and extra guests showed up once they heard, so we made 2nds. Beautiful texture to everything.
