He cooks potato and beet gratin but there is no mention of the cheese, when it comes out of the oven it is clearly bubbling with hot cheese on top. I would also put the sauce between each layer of potato and beets otherwise it would be a bit dry in between the layers.

Has anyone ever heard the stigma of using red wine with red meat and white wine with white meat? Anyone know where that originated? I ask because I have almost never seen, or at least cannot recall, Gordon doing this exclusively.
