This incredible Asian-style noodle dish features a very unusual combination of pumpkin and Korean chile paste which makes for one of the most delicious noodle dishes I've had in a long time. I ve never heard of bucatini before. It sounds great, since it s hollow. Usually I go for linguini or angel hair so I can get the most sauce possible to stick to my pasta. And leftover pasta dishes are always my favorite. I ll have to search for bucatini. Thanks. This recipe gives me ideas.

Now, as we all know quite well, tongs can't do their job properly unless you give them a couple of test clicks as you first pick them up.
I wonder if Chef John still needs to test click his tongs or if he has specially calibrated tongs.

I don t have hoisin sause. Can I substitute it with something? Maybe oyster sause?
I know the flavours are different. But maybe it will work too?

Having a couple kids at home, making this dish and starting it by roasting a pumpkin whole will increase the shock and awe factor up to 11
