I ve never heard of bucatini before. It sounds great, since it s hollow. Usually I go for linguini or angel hair so I can get the most sauce possible to stick to my pasta. And leftover pasta dishes are always my favorite. I ll have to search for bucatini. Thanks. This recipe gives me ideas.

Now, as we all know quite well, tongs can't do their job properly unless you give them a couple of test clicks as you first pick them up.
I wonder if Chef John still needs to test click his tongs or if he has specially calibrated tongs.
