I recommend a cut resistant glove for the mandolin, for anyone. They sell them for less than 15 bucks in the Amazon. It is great for preventing that red hue in your food. I also recommend them for people still learning proper knife handling techniques. Nothing is 100% fool proof, because fools always evolve into better fools, but they do help.

OMG Chef John, this isn't a 4-start dish that took 97 ingredients and 56 steps to make, it's just stoner food

Chef John, why wouldn't layering them so they touch the sides be OK? wouldn't they come out looking a bit more rose like that way? you know like your apple rose pastries? you could layer the potato slices sideways maybe by cutting some of them in half and work your way in from the outside. Wouldn't that work?

Hi John. I really enjoy your videos. On my way to be a chef myself, and doing research here when cooking new things. But. Im one of the low carb people. Could i challenge you to make some dishes (thats my wishes. Would love some sugar free desserts (stevia is okay. Well. Panna Cotta is great for that; )

i have tried making your twice baked potatoes two times now. theyre so great, by FAR the best baked potatoes I HAVE EVER HADi did however change up some stuff, i didnt add cheese or green onions. just a boring butter, milk, salt, pepper, mashed potatoes. but yea. AMAZINGgonna give these a shot soon too

pro-tip. keep a box of foodsafe gloves (your material of choice) for hand mixing. they are awesome for things like this, or mixing hamburger, or working with hot peppers, etc. also nice for working with raw meat cause you wont have to wash so often. they are cheap and extremely useful

What happened to your voice and the way you talk? I used to watch your vids way back. This sounds so strange compared to what I am used to. You still have the random high pitches in your voice, but you sound much more monotone and hastier than before. I found your voice more relaxing before.

You could even add a little sharp cheddar in between each layer of Potatoe too. or even green onion. looks amazing, I'm using this technique for my next entertainment dinner. Thanks for the nice tip. Thanks for all your incredible recipes and your great personality. :)
