This roast turkey Cordon Bleu, is one of those recipes that looks and sounds kind of fancy, but is actually very simple and straightforward to make. Beyond the visual appeal, this technique produces something much more flavorful than even the most perfectly roasted bird. Yvonne: Chef John Thanks for spending the time showing us how to butterfly the turkey breast. I'm not sure I would have known to make the multiple cuts if I hadn't seen it demo'd. For the fall & winter, I would substitute sage, thyme & rosemary blended in walnut oil for the pesto. Not sure what cheese I would use.

Why do cooks and chefs insist upon over salting our foods? we have refrigeration today and do not NeeD that much sodium in our foods. Excess sodium leads to high blood pressure and hyper tension and heart attacks and strokes. sTOP oversalting ur foods! 1/5to 1/2 of that amount is sufficient. Trust me if you use less eventualy you will get used to the natural flavors in food. I Dare you to try ut if not for your own health but ours as well. If you want a salty flavor use celeray powder.

Prepackaged frozen meals I'm sure could be considered sacrilegious for a fine chef like yourself, but Tyson's chicken cordon bleu with a rice dish is a quick easy family favorite of mine. Have done homemade many times but this turkey one looks fun.

Wow, does that look good. Almost makes me want to give up on my turkey for Christmas. And, don't you know those little cranberry soldiers will all give it that festive holiday
flavor. I will do this sometime.

Hmm. If I wanted to a a garlic herb butter like Kiev, I would put it under the skin after it's rolled in the ham, cheese, pesto, and mustard. That gravy would be SO good as the butter melts out of it.

The mustard/pesto/dried cranberries combo does seem a bit odd, but intriguing as well. That and using turkey might just put the 'Whadda you knew' in your Cordon Bleu.

Are you going to show how to make Pigs in Blankets, Roast Potatoes, Honey Roasted Parsnips and Bread Sauce? Seriously they are the Bees Knees for a Turkey Christmas Dinner.

I think that roasting with some carrots, celery, one clove garlic and onions would make that gravy insanely good. I just love a good turkey gravy. This looks marvelous.

This is soo beatiful taste-wise! I wonder if my family will disown me if to make it I'll cut out one breast fillet from the turkey waiting in fridge for Xmas day.
