All these look so easy and tasty! And my health conscious mind goes directly to the ingredients and it's nutrition. Which is why I am gonna try the chickpea nuggets tomorrow!
But. The other two recipes look really delicious Emma can you make a video on health pasta options sometime?
Since pasta is basically carbs and fat with a little bit of protein in the cheese, I would love to incorporate pastas in my daily meals but I can't. I need to know what protein sources and veggies go well with pastas.
P. S. I'm a vegetarian so at least one vegetarian nutritious pasta recipe would be really appreciated.

The chickpea nuggets look like hush puppies. I'd wondered what they were at start of the video; I would never have guessed chickpeas. I'm not of Italian ancestry, and sauces seem daunting (even if I can, and do, whip up delicious cream and meat gravies. As for gnocci, I first tried it about 10 years ago. It immediately reminded me of kumla, which are Swedish-Norwegian potato dumplings; raw onion is included while grinding the raw potatoes. Will give these recipes a try. Thanks Emma.

Thank you so much for this video! I would love to cook more at home but I'm a student and I work part-time so I don't really have the time or energy most of the time. These recipes seem simple and fast enough and I love that they're real authentic Italian recipes! I will try the cheesy gnocchi right now. Again, thank you, you're a lifesaver!

Store bought gnocchi pan fried with a little olive oil, garlic butter added at the end and sprinkled with fresh chopped parsley and parmesan is my favourite lazy supper or a great side dish. They are crispy on the outside, fluffy inside, garlicky, herby and cheesy. Like little roast potato's.

Emma, I just have to say that I LOVE your videos. My grandparents came from Liguria to California and food is my main connection to Italy. I go back to Liguria as often as possible, but your videos make me feel like I have visited.

The polpetti freeze fantastically. Open freeze on a tray and then pop into bags. I make a big batch when I have time and they are so quick to grab from the freezer for a quick supper

I would add a few leaves of fresh basil to the pasta dish

When I was in junior high, my school would prepare butter and salt flavored pasta. Made me hate pasta for a little while but now I have reconciled with it
