when you let a steak sit after you take it off the grill you should cover it in foil. Basic idea is to cook to rare (if you want med rare) and use foil to finish the cooking once it's off the grill. That way you don't keep cooking off all the juices.

I do love a good ribeye! Piglet me, though, I get my meat guy to cut them 1-1/2 inches thick. LOL
Love the simple marinade, and the dressing, and I can see slicing the steak and serving it right -ON- the salad. Like tomorrow. :-)

Once you put on the steak, don't immediately move it around to 'keep it from sticking'. Drop it on and don't move it for at least a minute. When it sears properly it'll lift off without sticking.

So that's what i did wrong before the fire, he kept the lid off the grill - 400-F. Im not sure about soy sauce on expensive steaks.
