The key to a great Pizza to me Is the crust. It has to be ultra ultra flakey cracker crust. More than just thin dough It has to be as easy as a soft cracker
to break apart that how I like It. Mild tomato sauce, no spice whatsoever just sweetness ( it can't be bland but also not spicy. The Sausage nor the pepperoni
can be spicy either. The sauce should be sweet. I don't like brick pizzas that harden up even if they're thin everybody uses the same dough.

The sticky drop test at 4: 08 depends on your batch size (that pesky net gravitational attraction thing, but probably for bench kneading, most batches range within a fairly narrow S/M/L/XL mitt spectrum, rather than ranging across the superjumbo hand-/stand-/floor-/cement- mixer spectrum, so it's probably close enough.

Excellent presentation and explanation of Chris Bianco about making pizza but Aziz Ansari did something unhygienic ran his hand through his hair and then manipulated the dough, they had to edit that or show when he washed his hands

In Italy the pizza you will see most of the time is Margherita which is tomato, basil and mozzarella cheese.
The pizza Chris and Aziz make is Marinara which is kind of the let's test if the tomato and the doe are good pizza.

There was like no cheese on that pizza. I'm Italian and I had a problem with that. They didn't even have globs of mozzarella or anything, just sprinkled a tiny bit of parmesian, like wut? Who eats saucy bread?
