If you are going to make a ne england style roasting pit you must do a clam bake! Lobster, crabs, large prawns, clams (cherry stone, Longneck Quoahog, razor clams oysters, scallops and mussels) red bliss potatoes, and corn on the cob in the husk (remove the yellow threads first and fold back the husk) You can add in any shelled periwinkles and welks that are edible ) put them on the top last layer before you finish off with the last layer of seaweed along with the scallops and mussels. You will also need a lot of seaweed, too help trap the heat and help steam the food items. Dig a pit 4-6 feet wide and long by 3-4 deep in the sand. line with large river or beach rounded rocks. make at least 1 foot thick and stick into the sand sides of the pit. build a big fire in the pit to the top and let burn whie to prep the food items and seaweed. Wash the potatoes and corn, dress the mussles and clams. remove nay beards and barnacles. Once the fire has burned down to coals start adding in a 6 inch layer of seaweed. You are going to need about 4-5 bushels of seaweed (the thick rubbery brown weed with the air bladders work best. Rinse them in sea water before you add to the pit) Add in the lobsters, potatoes, quoahog clams, and rock crabs (the big thick ones with the huge claws. Add a layer of seaweed 3-4 inches thick. The pit should be steaming heavily Add in your oysters, other crabs, and corn. cover with another 3-4 inch layer of seaweed. Now add in the last of your ingredients, mussels, scallops, smaller clams razor clams, welks, and periwinkles. Cover with the rest of the seaweed and cover it up with a layer of dirt, then the rest of the sand from the pitdug out pile. mound it up with the dirt and sand. If you wish you could place some dozen lemons on the last layer with the mussels and scallops and some entires heads of garlic and vidalia (sewwt) onions whole. Let bake 6- hours. It will be done when it pretty much stops steaming. Dig up carefully and enjoy. Will feed 10-20 people depending on your initial amount of food added. You can make a miniature version in a 2 quart pot/ need one lobster, on rock crab, several clams, mussels and scallops a few thin layers of seaweed. Taters and corn. Layer the same way after placing some medium sized rounded stones in the bottom of the put and heat on medium heat add an inch of water on the bottom to help get the steam going.

if you add a spot of oil before the butter the butter can handle a higher temp in the cast iron and not burn allowing for a better fry on the pigeon. which btw should be done on bones by roasting the crown first then flipping it. learned that on Master chef; )

For the Saxon house window, are you going to use poured glass, or more traditional scraped thin vellum that is then oiled to be translucent? The window will need a candle holder behind it inside. Maybe make homemade hand dipped candles for it?

Do the same with a rabbit but have two of you there because I can get two meals out of a rabbit easy. Reminds me of my past life, I am in the USA now but back in Worcestershire I would hunt pigeon and rabbit always a good meal.

Hey buddy, I like taking out vermin and getting a meal as well? Come on over to south Florida and take out some iguana! Miami/everglade area is absolutely infested with them. Alot of businesses will pay u to come get them even

Nice Hunting, in this area people go dove hunting. They are a lot harder to hit. Unfortunately, there are some people do believe meat magically appears in the supermarket. Another hot and humid day here 35 c.

Also people don t realise that pigeons carry more disease than rats and you re more likely to catch it from a pigeons

Gordon Ramsey showed a way with pigeons. Twist the wings and they pop off. Push you re thumbs inside and the breast meat pops out inside out and you can just peel them breast meat from the skin.
