How To Make Bun Bo Xa Ot A Traditional Vietnamese Dish saigonbond: Bun Thit Bo Xao Xa Ot is even better using slightly thicker vermicelli noodles, topped with crushed roasted peanuts, bean sprouts, crispy fried shallots, do chua (pickled daikon & carrot, spicy hoisin, and 'Southern' nuoc cham (minced garlic & chiles, lime juice, sugar, fish sauce, Sprite/coconut soda. Pro tip: Use a mortar & pestle with the chopped lemongrass (to release all essential oil and full-bodied flavor) before putting it in the food processor. You can also make this dish Vegan by substituting the fish sauce with Maggi seasoning and substituting the beef with fried tofu.

Any Vietnamese here feel confused by this dish? My family came from the North and this is the first time I see anyone made a dish like this. The lemongrass paste makes no sense to me since we usually just marinate some finely minced lemongrass to the meat or deep fried in some dish, but since lemongrass is all fibres, no one wants to eat a lot of it. And the meat should have been sliced thinly before hand. All the ingredients are correct, just the way she cooks it make me thinking they shouldn't have called it traditional Vietnamese food cuz it not.

tbh I'm viet but I don't think I've had this version, probably because I'm south Vietnamese but it really interests me to see the differences in food and culture

Good God Thats a lot of pepper Im not sure I can handle that kind of heat. Looks yummy though Id still make it, without all that pepper.
