Incredible. Nowhere is it mentioned that this is an originally Persian stew (Isfidbaja is Arabized form of Persian -Sefid-Baj- which literally means -White Stew-) and has a Persian name and that a significant chunk of the recipes in Ibn Warraq's Abbasid cookbook, the Kitab Al-Tabikh are Persian and reflect the cosmopolitan nature of the caliph's court at Baghdad. Also, it's not the oldest stew at all. For that criteria, one should consult Bottero's translation of the Babylonian cooking tablets which contain curiosities like -Elamite- and -Assyrian stew-. Typical Arab-washing. --Downvoted for dishonesty, false advertising and a horrific mangling of the name of -Isfidbaja-.

This isn't the world's oldest stew, we can find recipes much older than a 1000 years old in De Re Coquinaria. If this recipe comes from al-Warraq, it is only the oldest known stew recipe from the arab world.
