Samin Nosrat-author of Salt, Fat, Acid, Heat and host of the new Netflix show of the same name-is in the MUNCHIES Test kitchen showing us how to properly clean and cook artichokes. Both her cookbook and the show are about not only great recipes but also solid cooking techniques and instruction on how to build flavor. Can you help? Right now mental health clinics can get away with giving maintenance antipsychotic shot doses over a week late to the patient; even a day late can cause problems. This causes withdrawl that feels just like whip lash. One time, they were a full week late with ordering the medication, and I couldn-t move my neck for two weeks. It is excrushiating. I have been trying to get this fixed for 5 years and they finally connected me with the grievances office. They lied to me, and said they had no record of the shot being late. Either She lied, or it seems like they are covering up their belligerent mistakes, by not keeping records. They have been late over a dozen times. I was a straight A student in the sciences at the University of Arizona. I don-t use narcotics. They are threatening me with crippling pain every month because there is no law that they have to respect the patients right to receive their medication in a timely manner. Please help! Patients are being tortured by this loophole.

We enjoyed your Netflix series, and as well, bought your cookbook for a family member. I would like to kindly disagree that one need to toss out the leaves of artichokes, as we grew up steaming the artichokes, pulling off each leaf to dip (the base) in a sauce, then using our teeth to scrape off that delicious, albeit small, amount of meat at the base of the leaf. We would then get to the inner leaves that are too small (and meatless) to scrape, as well as the choke, and scoop those out, leaving us with that most amazing heart as our final reward. Perhaps one could consider, if making a dish of only hearts, steaming the leaves to enjoy as a side of its own; .

At the beginning of the video she presents herself as a teacher, then throw away edible parts of a vegetable calling them waste. And then has a guess on etymology when a 5 seconds google search TEACHES you the origin of the word that has nothing to do with the verb -choke-. I won't watch the rest of the video, i'll go to a shop and make myself a good artichaut vinaigrette.

Love the way she has so much fun cooking. .. She is obviuosly a great cook but she never gets overpowered by the details of the recipe. She just loves what she is doing and it shows. I have a feeling that if she totally trashed dinner everybody would still love it just because she would be so darn entertaining.

You have the BEST personality of anyone in the food industry. I can't get enough! Thank you for making my day every time I see something of yours! I LOVED Salt Fat Acid Heat and I saw you make the most beautiful salad I have ever seen with Jimmy Nardleo peppers. Maybe on M. Pollan? You are FANTASTIC!

I get boatloads of artichokes each year and she's right. All that stuff she peels and chops off is totally inedible. This looks like a great timesaver at the table. Sticking her finger in boiling water and hand (HAND) tossing HOT HOT HOT vegetables? What is this woman's super power?

I love the way samin teaches and cooks cause it-s what makes sense! The tricks about salting the water, letting garlic/onions sit in the lemon juice for a bit before putting in the oil. it-s the old school logical tricks my grandmother taught me that makes my cooking great!

These look totally delicious. --One question: If your goal is to maximize even browning, why use a grill pan, which is designed to minimize contact, in favor of cutesy grill marks? Wouldn-t your run-of-the-mill, flat bottomed piece of cast iron be more effective?

She looks genuinely funny and someone who truly appreciates food in every form. I want to meet her! -By the way, artichokes are my favorite vegetables. So delicious, they are worth all the mess just to get rid of the spikes.

when she said the fibrous parts of the artichokes would take 350 years to grill from raw I figured that was some sort of scientific understanding that she had and not just to demonstrate the necessity of boiling first lmfao
