In Thailand, its usually considered a street food dish, and in Bangkok you cant walk more than a few feet without noticing the next chicken rice street food vendor. There are a couple of parts to any plate of khao man gai, boiled chicken, rice cooked with chicken broth, chicken soup, and finally the sauce. In this Thai street food adventure and chicken rice recipe, I also decided to include an extra part, serving the dish exactly the way youll find it when youre in Thailand. This is not only a recipe, but a full food adventure, from start to finish. So keep watching this video all the way to the end, and join me on this epic food journey for the Thai style of Hainanese chicken rice. Ok, so the first part of this khao man gai recipe ) is to go to the market or the supermarket and buy yourself some chicken. I just went to the local market, bought 4 chickens and brought them home. Im not sure exactly how youll be able to buy your chickens, but in Thailand I bought them with their heads on and the organs in-tact. So the first thing I had to do was wash and rinse the chicken, and then take out the organs. You want to be a bit careful, and try to make sure nothing breaks when youre fishing them out, because that could cause the chicken to get bitter. Anyway, once youve done that, just wash out the chicken again, and its time to boil the chickens. You want to boil the chicken for probably about 35 - 45 minutes, my 4 chickens took about 45 minutes. The Hainanese chicken rice recipe usually says to plunge the chickens into ice water after they are finished boiling, but in Thailand, this is usually not the case, and the chickens are usually just left to sit and cool down. Next part of this street food recipe is the rice. First you need to deep fry a bunch of garlic in either chicken oil or vegetable oil, rinse your uncooked rice, and then put the fried garlic into the rice. Instead of using water to cook the rice, well be using the fresh chicken broth. Then just cook your rice normally in the rice cooker. The Thai version of chicken rice sauce is a little different from the Singapore and Chinese version. Its heavy on ginger and chilies, and made with fermented soy bean sauce. Take all the ingredients and then just blend them up, bring it to a boil, and your khao man gai sauce is good to go. For the chicken soup, you basically just take the broth, skim off all the oil, and boil it again. You can add in as much salt and pepper to your liking, and then chop up a winter melon or daikon radish, boil it in the soup, and the final step is to toss in a handful of cilantro. These four parts of the khao man gai recipe ) are ready, and the next thing to do is just assemble a Thai street food style plate. My favorite part is putting it all together and serving it. Take a bowl of rice, put it on a plate, then slice off some chicken and cut it into strips. Then serve the chicken rice with a bowl of soup on the side, and sauce on the side. In this video, I then hung up the chickens on my food cart, and headed over to our friends house to serve them the dish. But I also included another recipe (written in the box, where I reduced the ingredients to just 1 chicken - so that if youre not cooking for a whole party, you can still make this recipe for a smaller group. Okay, it was fun. Nice and complete. Though I do like to chill the chicken twice, the first time just after you put the chicken in - this really crisps up the skin. Maybe it's not the Thai way. I've been watching a while now and I've enjoyed them mostly - with some reservations - surely not every dish is so good that you make that face, and secondly I'm a bit jealous that you get to eat and travel for money. I've enjoyed the Brazil videos - I was there last year, but even our taxi driver wouldn't drive through a favela, during the day. I also saw one of your other early videos, Devil ramen in Tokyo, and saw your wife holding the baby and the camera for you. And I would say now, that I'm at the stage now that I'm happy for you. Hope travelling isn't too much for the family. And get those banana chips shipped to Hong Kong.

ERRORIf. you boil the chicken, the stock retains all the leached nutrients. The boiled chicken is less nutritious and less tasty. Anyway, chicken should not be preboiled because steam cooking chicken with condiments under a lid simply takes 10 to 15 mins for the meat to cook. So, preboiling chicken is a waste of fuel, waste of time and drains out the nutrients, Thai food sucks big time. Thai food is a rip off of Indian cuisine and not surprisingly both cuisines are monotonous with clutter and uniform spicy taste.

I am an Indian and my gf is Thai. Last month, I visited her home at bangkok and she serves me this dish almost everyday. I literally say it may not look delicious for me at the first instance as we Indians like to eat lot of rice with fats and oils and fried items. But when I tasted the food gods swear I felt it amazing and very much healthy. Now when I visit her house next time, I am gonna cook this dish for her. Thanks man for sharing this dish. WOW This is a great video I am teaching English in Thailand and am having a great time trying new foods. Seeing your video helped me to understand the anatomy of a chicken and rice food cart So cool I now understand what the little brown flecks are in the rice Its also interesting to see how you layer the chicken flavors through the dish. Im going to watch this a few dozen times then try to make it myself. Thank you for this wonderful food adventure

Mark, If you wash your bum with your bare hand in typical Thai fashion, then, please don't touch the food with bare hands. Wear gloves at all times. Despite washing with soap and water, the detritus remains stuck under finger nails and enters food or water. The oralfecal route is the cause of deadly diseases and it's so uncivilized and unhygienic to wash your bum with bare hands.

In this one I'm pleasantly surprised to know that you're not just a super global foodie but you can cook well too. When I see you're into chicken rice too, I'm thinking wow You're my man, Mark cos I just love chicken rice. But to actually make it, that's another level for me

Hahahaha. I can see your hand shiver when you hang the first chicken. Good one Mark, keep it up. Love your street cart. Tips to cut the chicken. Tear and cut, tear and cut. tear/pull out the drumsticks and cut, tear out the wings and cut, half tear and half pull out the breast then chop chop chop.

I have tremendous respect for this guy just because he lives in Bangkok and chose family, food, good weather and his passion over staying in the United States even when he had a choice to stay in US and earn in dollars. Great people are those who can forego things in life. Much respect brother

Just made this today, was absolutely delicious, chicken didn't take long at all (I cooked two whole) and rice was pretty quick too Great recipe my family loved it and was great to give them a hint of when I went to Thailand Bangkok and fell in love with Chicken Rice Sawasdee all x
