CANDIED PECANS
8oz ( 227 g) Pecans (or nuts of choice)
egg white from 1 large egg
3 Tbsp (40 g) granulated sugar
3 Tbsp (40 g) light brown sugar

1 tsp (2. 5 g) ground cinnamon
2 tsp vanilla extract
WALNUT COOKIES
1 1/2 cups (225 g) all-purpose flour
1 tsp (5 g) baking soda
1 tsp (5 g) fine salt
8 Tbsp (113 g) unsalted butter (softened)
1 packed cup ( 200 g) dark brown sugar
1/4 cup (50 g) granulated sugar
1 large egg (room temperature)
1 1/2 tsp vanilla extract
1 cup (90 g) chopped walnuts (or pecans)
Bake in a preheated oven 350 F / 180 C for 12 to 13 minutes
BANANA BREAD MUFFINS
1 1/4 lb (567. 5 g) fresh ripe bananas (mashed)
2 large eggs (room temperature)
3/4 packed cup (170 g) light or dark brown sugar
2 tsp vanilla extract
1 stick (113 g) unsalted butter (softened)
1/3 cup (75 g) greek yogurt or sour cream
1 3/4 cup (220 g) all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup chopped walnuts (optional)
Makes 16 to 18 muffins baked at 350 F / 176 C for 20 to 23 minutes
Makes one loaf in a 9x5 inch pan baked at 350 F / 176 C for 60 to 65 min

1 tsp crushed anise seeds
3 cups (390 g) all-purpose flour
1/2 tsp fine salt
1 1/2 tsp baking powder
1/2 cup of sugar mixed with 1/2 tsp ground cinnamon
